Veggie Loaded Chow Mein



Veggie Loaded Chow Mein is a tasty stir-fried noodle dish that is full of tasty vegetables and seasonings. It's quick and easy to make, and it's great for a tasty lunch or dinner during the week.

Ingredients:

  • 200g chow mein noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 medium carrot, julienned
  • 1 bell pepper, thinly sliced
  • 1 cup cabbage, shredded
  • 1 cup broccoli florets
  • 1 cup mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped for garnish

Instructions:

Cook chow mein noodles according to package instructions, then drain and set aside

In a large skillet or wok, heat vegetable oil over medium-high heat

Add minced garlic and sliced onion, saut until fragrant and onions are translucent

Add julienned carrot, sliced bell pepper, shredded cabbage, broccoli florets, and sliced mushrooms

Stir-fry for about 5-7 minutes until vegetables are tender-crisp

Add cooked chow mein noodles to the skillet along with soy sauce, hoisin sauce, sesame oil, salt, and pepper

Toss everything together until noodles and veggies are well coated with sauce

Cook for another 2-3 minutes, stirring continuously

Adjust seasoning if necessary

Garnish with chopped green onions before serving

Serve hot and enjoy!
