Ingredients:
- 1 lb Italian sausage, casings removed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cans 15 oz each white beans, drained and rinsed
- 1 can 14
- 5 oz diced tomatoes
- 2 cups fresh spinach, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
Put Italian sausage in a big pot and cook it over medium-low heat until it turns brown
Use a spoon to break it up into small pieces
Cut up some onion and garlic and add them to the pot
Make the onion soft by cooking it
Spices like oregano, thyme, salt, and pepper should be added along with the chicken broth and white beans
Mix well
Lower the heat and let the soup cook for 15 to 20 minutes
This will give the flavors time to blend
Add the chopped spinach and stir it in
Cook for another 5 minutes, or until the spinach wilts
Check the seasonings and make changes if needed
If you want, you can serve it hot with a sprinkle of grated Parmesan cheese on top
