Ingredients:
- 4 large eggs
- 1/4 cup milk
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup diced bell peppers
- 1/4 cup sliced black olives
- 1/4 cup sliced pepperoni
- 1/4 cup sliced mushrooms
- 1/4 cup diced onions
- 1/4 cup diced tomatoes
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Preheat your oven to 350F 175C
In a mixing bowl, whisk together the eggs, milk, oregano, basil, salt, and pepper
Heat the olive oil in a skillet over medium heat
Add the onions, bell peppers, and mushrooms to the skillet and saut until they are tender, about 5 minutes
Pour the egg mixture over the sauted vegetables in the skillet
Sprinkle the mozzarella cheese, Parmesan cheese, black olives, pepperoni, and diced tomatoes evenly over the eggs
Transfer the skillet to the preheated oven and bake for about 15-20 minutes or until the frittata is set and the edges are golden brown
Remove from the oven and let it cool for a few minutes
Slice the frittata into wedges like a pizza, and serve hot
