Ingredients:
- 1 pound boneless chicken breasts, cut into 1-inch pieces
- 1 pound bell peppers, assorted colors, cut into 1-inch pieces
- 1 pound red onions, cut into 1-inch pieces
- 1/4 cup olive oil
- 2 tablespoons fajita seasoning
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- 12 wooden skewers, soaked in water for 30 minutes
Instructions:
In a large bowl, combine the chicken, bell peppers, and red onions
In a separate bowl, mix the olive oil, fajita seasoning, and lime juice
Pour the marinade over the chicken and vegetables, tossing to coat evenly
Let it marinate for at least 30 minutes
Preheat your grill to medium-high heat
Thread the marinated chicken, bell peppers, and onions onto the soaked wooden skewers, alternating between ingredients
Place the kebabs on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are charred and tender
Remove the kebabs from the grill and sprinkle with chopped cilantro
Serve hot and enjoy!
